Ingredients:
2 8oz each King salmon fillets
1/3 cup macadamia nuts, finely chopped
2 tablespoons fresh cilantro, chopped
1 Tbsp panko breadcrumbs
1 Tbsp olive oil
1 Tbsp lime zest
1 Tbsp lime juice
Salt and Pepper to taste
Instructions:
- Preheat oven to 400°F.
- Place salmon fillets on a lined baking sheet and season with salt and pepper.
- In a small bowl, combine macadamia nuts, cilantro, breadcrumbs, olive oil, and lime zest.
- Press the mixture evenly over the top of each fillet.
- Bake for 12 to 15 minutes of until the salmon is cooked through and the crust is golden.
- Drizzle with lime juice before serving.
