Baked Salmon with Macadamia & Cilantro Crust

Serves 2

Ingredients:

2 8oz each King salmon fillets
1/3 cup macadamia nuts, finely chopped
2 tablespoons fresh cilantro, chopped
1 Tbsp panko breadcrumbs
1 Tbsp olive oil
1 Tbsp lime zest
1 Tbsp lime juice
Salt and Pepper to taste

Instructions:

  1. Preheat oven to 400°F.
  2. Place salmon fillets on a lined baking sheet and season with salt and pepper.
  3. In a small bowl, combine macadamia nuts, cilantro, breadcrumbs, olive oil, and lime zest.
  4. Press the mixture evenly over the top of each fillet.
  5. Bake for 12 to 15 minutes of until the salmon is cooked through and the crust is golden.
  6. Drizzle with lime juice before serving.
