Ingredients:
4 (6 oz) Salmon Portions
1 jar Pesto of choice
1 sheet of puff pastry dough
8 spears of asparagus
Directions:
- Pre-heat oven to 350°F.
- Cut pastry sheet into 4 even squares.
- Add 1 Tbsp. of pesto diagonally onto the puff pastry and top it with 1 piece of salmon and 2 spears of asparagus.
- Secure the salmon and asparagus by bringing in one corner of the puff pastry and overlapping it with the opposite corner.
- Place on a baking dish and cook in the oven for about 20 minutes or until internal temperature of the fish reaches 145°F.
