Salmon is one of the most popular seafood choices in the United States. Modern salmon production provides us with a consistent supply of flavorful, nutritious protein at a great price. This is a very versatile fish and works well in a variety of cooking applications. 

COUNTRY OF ORIGIN: Norway and the Atlantic

CHARACTERISTICS: Farmed Salmon has a delicate flavor that is much milder than wild Salmon.  The meat is firm and moist, thanks to its high Omega-3!

COOKING SUGGESTION: Poached  |  Baked  |  Grilled  |  Steamed  | Pan Roasted  | Boiled

WINE PAIRING: Chardonnay

RECIPE:  Salmon in Puff Pastry with Asparagus and Pesto

serves 4

Ingredients:

4 (6 oz) Salmon Portions
1 jar Pesto of choice
1 sheet of puff pastry dough
8 spears of asparagus

Directions:

  1. Pre-heat oven to 350°F.
  2. Cut pastry sheet into 4 even squares.
  3. Add 1 Tbsp. of pesto diagonally onto the puff pastry and top it with 1 piece of salmon and 2 spears of asparagus.
  4. Secure the salmon and asparagus by bringing in one corner of the puff pastry and overlapping it with the opposite corner.
  5. Place on a baking dish and cook in the oven for about 20 minutes or until internal temperature of the fish reaches 145°F.
