2lbs Black Tiger Shrimp, peeled & deveined
4 cloves of garlic, sliced
2 large tomatoes, medium diced
1.5 cup white wine
2 Tbsp. butter
1/4 cup fresh parsley, chopped
8 slices of ciabatta bread, grilled or toasted
1 lemon, cut into wedges
salt and black pepper
1. In a large skillet over medium high heat, add olive oil and garlic. Once you start to see a little color on the garlic, add shrimp, a pinch of salt and black pepper and then stir fry for about 2-3 minutes.
2. Add white wine and tomatoes and let it simmer for about an additional 3-4 minutes.
3. Turn off heat and add butter.
3. Plate your shrimp and serve with grilled or toasted ciabatta bread and a wedge of lemon.
