Garlic and Herb Butter Lobster Roll

Serves 2

Ingredients:

8 oz Cooked Atlantic Lobster Meat
2 split top brioche rolls
3 tbsp Santa Monica Seafood Garlic and Herb Butter
1 tbsp fresh lemon juice
1 tbsp chopped parsley
1 tsp chopped chives
Salt and pepper to taste

Instructions:

  1. Gently warm the lobster meat in a pan over low heat with 2 tablespoons of garlic and herb butter.
    Do not overcook.
  2. Add lemon juice, parsley, chives, salt, and pepper. Toss lightly to coat.
  3. In a separate pan, toast the brioche rolls with the remaining butter until golden.
  4. Fill each roll with warm lobster mixture.
  5. Serve immediately with lemon wedges if desired.
