Halibut in Parchment Paper

Serves 2

Ingredients:

2 6oz Halibut Portions
2 sheets of parchment paper (about 12″ in diameter)
1/2 cup of zucchini, sliced
4 Tbsp. Parmesan cheese, grated
1 cup Cherry Tomatoes, halves
4 Tbsp. Fresh Basil, chopped
1 Tbsp. Olive Oil
salt and pepper, to taste

Instructions:

  • Pre-heat oven to 375°F.
  • Place sliced zucchini in the center of each parchment paper followed by cherry tomatoes and Parmesan cheese.  Add Halibut on top and season with salt and black pepper.
  • Seal the parchment paper by rolling all excess edges in.
  • Place on a baking dish and cook in the oven for about 12-15 minutes depending on thickness of the fish.
  • Carefully unfold the parchment paper and enjoy it hot and fresh.
