1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp paprika
1/4 tsp chili powder
1/4 tsp salt and black pepper

Wahoo is a lean ﬁsh and works best in preparations that won’t dry it out. Just a quick pan sear then ﬁnished in the oven, or simply poached, are both great ways to work with Wahoo and keep it moist.
We recommend enjoying this wonderful ﬁsh seasoned with Catalina Spice Rub then paired with a side of our Traditional Coleslaw or Roasted Red Beets for a delicious quick meal!
Cook to a minimum internal temperature of 145°F.
Combine all the dry seasonings and sprinkle it onto your fish. Proceed below with your preferred cooking method.
GRILL (8-10 min) - Grease grill with non-stick cooking spray. Place ﬁsh on a hot grill and cook for about 3-4 minutes per side.
OVEN BAKE (15 min) - For best results, cook in a conventional oven. Preheat oven to 375°F. Place ﬁsh on a baking dish. Bake for about 13-15 minutes or until ﬁllets ﬂake with a fork.
PAN-FRY (8-10 min) - Fry in 3 tablespoons of vegetable oil or butter on medium-high heat for 4-5 minutes per side.
BROIL (4-6 min) - Place on an oiled baking sheet and broil on high for 4-6 minutes.
