INGREDIENTS:
1/2 lb. Arctic Char Fillet, cut into 1.5"-2" cubes
2 cups Fresh Spinach
1 cup Broccoli Crowns, cut into medium size pieces
2 Tbsp. Shallots, minced
8 Large Eggs
1 Tbsp. Olive Oil
1/3 cup Heavy Cream (may substitute with milk)
3 Tbsp. Salted Butter
5 oz. Goat Cheese or Cream Cheese
1 tsp. Fresh Thyme, finely chopped
1 tsp. Fresh Dill, finely chopped
Liquid Smoke (optional)
Salt and pepper to taste
INSTRUCTIONS:
- In a large mixing bowl, add eggs, heavy cream and a dash of salt and black pepper. Whisk and set aside.
- Place a nonstick and oven safe skillet on medium high heat and add olive oil. Sear Arctic Char for 2 minutes making sure not to break the meat. Remove from pan and set aside. (Note: If you want a smoked flavor added to your fish, you can quickly marinade it with 1/2 teaspoon of liquid smoke 15 minutes before cooking).
- Using the same skillet, place over medium heat add butter until it is melted and light golden brown. Add shallots, broccoli and spinach followed by a dash of salt and black pepper. Cook for about 3-4 minutes stirring occasionally.
- Add fish and chunks of goat or cream cheese to the skillet, mix, and then pour your egg mixture. Top it with thyme and dill and then give it one quick stir to make sure everything is distributed evenly. Cook on medium heat for 5-6 minutes on the stove top and then finish in the broiler on high for 2-3 minutes. (It's important not to stir or touch the frittata while it's cooking on the stove top).
We recommend letting this set for a few minutes and then serve it warm.
