4 cups mixed greens (such as spinach, arugula, and lettuce)
1 cup cherry tomatoes, halved
1/2 cucumber, thinly sliced

2 tablespoons extra virgin olive oil

  1. Start by patting the Swai fillets dry with paper towels and season both sides with paprika, salt, and pepper.

  3. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber slices, and red onion slices.
  4. In a small bowl, whisk together the balsamic vinegar and extra virgin olive oil to make the dressing.
  5. Drizzle the dressing over the mixed greens and toss until everything is well coated.
  6. Divide the mixed green salad between two plates and top each with a pan-fried Swai fillet.
