Simple Grilled Steelhead Trout with SMS Corn Salad

2 ea. 8oz Steelhead Trout Portions 
1 Lemon, zested and juiced 
1/2 cup of olive oil 
1/2 lb. of Roasted Corn Salad - from our deli case! 
1 Tbsp. Flat Leaf Parsley, chopped 
Salt and pepper 


  1. Preheat the grill making sure the grill grates are cleaned and seasoned. 
  2. In a small bowl whisk together lemon zest, lemon juice, olive oil, salt, and pepper. Set aside. 
  3. Lightly flavor your fish with salt and pepper and then grill each side for about 2-3 minutes. Cooking time will vary depending on the thickness of your Steelhead Trout. 
  4. Scoop the roasted corn salad and plate it at the base of your dish and then top it with your fish. Spoon over some lemon oil and enjoy!
