Sole Fish with Citrus Sauce, Fresh Parsley, and Blistered Cherry Tomatoes

Ingredients:
2 sole fish fillets (6-8 ounces each)
Salt and pepper to taste
1 tablespoon olive oil
1 cup cherry tomatoes
2 tablespoons chopped fresh parsley
1 tablespoon butter
Juice of 1 lemon
Zest of 1 lemon
2 tablespoons orange juice
1 tablespoon honey
1 tablespoon soy sauce

Instructions:

  1. Season the sole fish fillets with salt and pepper on both sides.=
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the cherry tomatoes to the skillet and cook, stirring occasionally, until they start to blister and soften, about 3-4 minutes. Remove the cherry tomatoes from the skillet and set aside.
  3. In the same skillet, add the seasoned sole fish fillets. Cook for 2-3 minutes on each side, or until they are cooked through and easily flake with a fork. Remove the fish fillets from the skillet and set aside.
  4. In the same skillet, reduce the heat to medium-low and add the butter, lemon juice, lemon zest, orange juice, honey, and soy sauce. Stir well to combine and cook for 1-2 minutes, or until the sauce is slightly thickened.
  5. Return the cooked sole fish fillets to the skillet, spooning the citrus sauce over them. Cook for an additional minute to heat through.
  6. To serve, divide the sole fish fillets between two plates. Spoon the citrus sauce over the fillets and garnish with blistered cherry tomatoes and chopped fresh parsley.
