1lb Albacore Tuna, cut into 1.5"-2" cubes
1/2 lb Shrimp, peeled & deveined
3 Tbsp. Olive Oil
6oz Tomato Paste
2 qt Fish Stock
2 cups Cherry Tomatoes, chopped
3 Cloves Garlic, minced
1/2 cup Onions, chopped
1/2 cup Carrots, chopped
1/2 cup Celery, chopped
2 Tbsp. Chives, chopped
2 tsp Smoked Paprika
1 tsp Crushed Red Chili Peppers
Salt and Black Pepper
In a large pot on medium high heat add olive oil. Right before the oil gets to a smoking point, add cherry tomatoes, tomato paste, onions, garlic, carrot and celery. Season with salt, black pepper and paprika. Stir and let it cook for about 3 minutes.
Add fish stock and crushed red peppers. Mix and then add Albacore and Shrimp. Stir and then cover and let it simmer for about 10-15 minutes on medium low heat.
Plate fish stew and finish it with chopped chives and a drizzle of extra virgin olive oil.
