4 Portions Orange Roughy
1 Tbsp. Chopped Garlic
2 Cups Fresh Grape or Cherry Tomatoes
½ Cup Fresh Basil, chopped
1 Tbsp. Lemon Juice
4 Tbsp. Olive Oil, divided
Salt and Pepper to taste
Lightly season Orange Roughy with salt and pepper. Preheat large skillet over med high heat with 2 Tbsp. oil to lightly coat bottom.
Pan Sear Roughy approximately 3-4 min per side or until cooked through, then remove to a plate and cover.
Turn heat to high, add tomatoes and garlic and cook just until tomatoes pop.
Turn off heat, add lemon juice and basil then stir to combine.
Season with salt and pepper if needed.
Top Roughy with tomato and basil mixture then lightly drizzle with additional Olive Oil.
Serving Suggestion: Serve with roasted potatoes and sautéed fresh veggies.
