Vermicelli Noodle Salad with Shrimp


Serves 2


1 lb. Cooked Shrimp, peeled and deveined 
1 pk. Vermicelli Noodles 
1 ea. Fresh Lime, juiced 
3 Tbsp. Water 
3 Tbsp. Vinegar (Rice Wine or Distilled) 
3 Tbsp. Fish Sauce 
3 Tbsp. Sugar 
1 tsp Red Thai Chilis, chopped 
1 clove of garlic, minced 
3 Tbsp. Cilantro, chopped 
3-4 sprigs of Fresh Mint, removed from stems 
Red Onions, sliced 
Tomato, sliced 
Cooked lean ground pork (optional)  
Toasted Cashews or Peanuts (optional for garnish)


  1. Cook vermicelli noodles according to the package. 
  2. In a small bowl add fish sauce, water, lime juice, white vinegar, sugar, chilis, and garlic. Mix and set aside. 
  3. Assemble your bowl with the cooked noodles at the base and layer with shrimp, red onions, tomatoes, fresh cilantro, and mint. Drizzle with the vinaigrette and garnish with nuts and more chilis if you like it spicy. Toss and enjoy!
