Seared Sea Scallops with Mango Salsa

Serves 2

Ingredients:

8 to 10 sea scallops, patted dry
1 tablespoon olive oil
Salt and black pepper to taste
1 cup Fresh Diced Mango Salsa from our deli case

Instructions:

  1. Pat scallops dry and season lightly with salt and black pepper.
  2. Heat olive oil in a skillet over medium high heat.
  3. Place scallops in the pan and sear for 2 to 3 minutes per side until golden brown and just cooked through.
  4. Remove from heat and let rest briefly.
  5. Plate scallops on top of the Fresh Diced Mango Salsa. Serve immediately.
Prefer to make your own? Combine diced mango, red onion, cilantro, lime juice, and a pinch of salt.
