Ingredients:
8 to 10 sea scallops, patted dry
1 tablespoon olive oil
Salt and black pepper to taste
1 cup Fresh Diced Mango Salsa from our deli case
Instructions:
- Pat scallops dry and season lightly with salt and black pepper.
- Heat olive oil in a skillet over medium high heat.
- Place scallops in the pan and sear for 2 to 3 minutes per side until golden brown and just cooked through.
- Remove from heat and let rest briefly.
- Plate scallops on top of the Fresh Diced Mango Salsa. Serve immediately.
Prefer to make your own? Combine diced mango, red onion, cilantro, lime juice, and a pinch of salt.
