
Ingredients:
4 Portions Orange Roughy
1 Tbsp. Chopped Garlic
2 Cups Fresh Grape or Cherry Tomatoes
½ Cup Fresh Basil, chopped
1 Tbsp. Lemon Juice
4 Tbsp. Olive Oil, divided
Salt and Pepper to taste
Directions:
- Lightly season Orange Roughy with salt and pepper. Preheat large skillet over med high heat with 2 Tbsp. oil to lightly coat bottom.
- Pan Sear Roughy approximately 3-4 min per side or until cooked through, then remove to a plate and cover.
- Turn heat to high, add tomatoes and garlic and cook just until tomatoes pop.
- Turn off heat, add lemon juice and basil then stir to combine.
- Season with salt and pepper if needed.
- Top Roughy with tomato and basil mixture then lightly drizzle with additional Olive Oil
Serving Suggestion: Serve with roasted potatoes and sautéed fresh veggies.
