Ahi Tuna Poke Bowl


Serves 2

1 6oz Ahi Tuna Steaks, cubed to 1.5-2” thick
1 Tbsp sesame seed oil
1 Persian or English cucumber, sliced
¼ cup edamame, blanched and peeled
micro herbs or sprouts
2 radishes, sliced
2 Tbsp. pickled ginger
1 Ripe avocado, cubed
1/2 lemon, juiced
1 green onion, sliced
½ cup Santa Monica Seafood Poke Dressing - ORDER HERE!
1 tsp toasted sesame seeds
1 (8.8oz) bag of Uncle Ben's Ready Rice Whole Grain Brown
salt and pepper


Cook rice in the microwave according to Uncle Ben's Ready Rice Instructions.

Prepare all fresh ingredients by cubbing, dicing and slicing.

In a bowl add sesame seed oil, lemon juice, poke dressing and a pinch of salt and black pepper. Mix and set aside.

In a single serving bowl plate your items in sections: cubed tuna, diced avocados, sliced cucumbers, edamame, sliced radishes and pickled ginger. Sprinkle on top with micro herbs or sprouts and drizzle the poke dressing mix all over.

Garnish with extra sesame seeds and green onions and enjoy.
