Crunchy Baked Cod


4 Cod portions about 5 oz each
1 Cup Ritz cracker crumbs
2 Tbsp. Butter, melted
1 Tbsp. Italian Parsley, chopped
1 Tbsp. Olive oil
1 tsp Garlic powder
Salt and Pepper to taste


  1. Preheat oven to 400°F.
  2. Mix melted butter, cracker crumbs and parsley together.
  3. Lightly coat fish with olive oil and then season with salt, pepper and a portion of the garlic powder.
  4. Add the remaining garlic powder to the crumb mixture. Place fish in an oven safe pan. Top each portion evenly with crumb mixture.
  5. Bake for about 15-20 minutes, or until crumb mixture is golden and crunchy; and the fish is cooked through.

Serving Suggestion: Serve with a dollop of Santa Monica Seafood Tartar Sauce and lemon wedges.
