4 Cod portions about 5 oz each
1 Cup Ritz cracker crumbs
2 Tbsp. Butter, melted
1 Tbsp. Italian Parsley, chopped
1 Tbsp. Olive oil
1 tsp Garlic powder
Salt and Pepper to taste
- Preheat oven to 400°F.
- Mix melted butter, cracker crumbs and parsley together.
- Lightly coat fish with olive oil and then season with salt, pepper and a portion of the garlic powder.
- Add the remaining garlic powder to the crumb mixture. Place fish in an oven safe pan. Top each portion evenly with crumb mixture.
- Bake for about 15-20 minutes, or until crumb mixture is golden and crunchy; and the fish is cooked through.
Serving Suggestion: Serve with a dollop of Santa Monica Seafood Tartar Sauce and lemon wedges.
