Shrimp Orzo Pasta Salad with Kalamata Olives and Tomatoes Recipe

Serves 2

Ingredients:
1/2 lb Shrimp, peeled and deveined
1 cup Dried Orzo Pasta
1/4 cup Kalamata Olives, pitted and quartered
1/2 cup Grape Tomatoes, halved
2 Tbsp. Olive Oil
1 Lemon, zested and juiced
1 Tbsp. Parsley, chopped
1/4 cup Feta Cheese Crumbles
Salt and Pepper

Instructions:

In a medium pot filled with water, add salt and bring to a boil. Once boiling, add orzo pasta and cook for about 8-10 minutes until al dente. Strain and add to a large mixing bowl.

Using the same pot, add water and bring to a boil. Season with salt and then add shrimp.  Cook for about 3 minutes, strain and add to the bowl of orzo pasta.

To the same mixing bowl, add all the other prepared ingredients.  Season lightly with salt and pepper and enjoy.
